This is the traditional semolina cake recipe, dyed yellow to mimick the ancient look and with cardamon as spice to retain the authentic flavours.
Ingredients:
- 1 cup vegetable oil (250ml)
- 1 1/2 cup granulated white sugar
- 3 eggs
- 1 cup whole milk
- 2 cups semolina
- 1 cup all purpose flour (125g)
- 1 tbsp cardamon powder (plus 1/4 tsp nutmeg powder as optional)
- 1/2 tsp yellow food colouring
- 1 tbsp vanilla essence
- 1 tsp baking powder
- 1/4 tsp baking soda
Preparation:
- In a large bowl, whisk together the oil and sugar and add the eggs one at at time, mixing after each addition.
- Add in the milk, cardamon powder, vanilla essence and food colouring and mix.
- And the semolina and sift over that the flour and baking powder. Mix well.
- Pour in a greased baking tin and bake in a preheated oven at 180°C for 25-30 minutes.
- Cool on a wire rack and serve warm. It stores well in the fridge for 3 days, or in the freezer for up to 1 month.
