Semolina Cake

This is the traditional semolina cake recipe, dyed yellow to mimick the ancient look and with cardamon as spice to retain the authentic flavours.

Ingredients:

  • 1 cup vegetable oil (250ml)
  • 1 1/2 cup granulated white sugar
  • 3 eggs
  • 1 cup whole milk
  • 2 cups semolina
  • 1 cup all purpose flour (125g)
  • 1 tbsp cardamon powder (plus 1/4 tsp nutmeg powder as optional)
  • 1/2 tsp yellow food colouring
  • 1 tbsp vanilla essence
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Preparation:

  1. In a large bowl, whisk together the oil and sugar and add the eggs one at at time, mixing after each addition.
  2. Add in the milk, cardamon powder, vanilla essence and food colouring and mix.
  3. And the semolina and sift over that the flour and baking powder. Mix well.
  4. Pour in a greased baking tin and bake in a preheated oven at 180°C for 25-30 minutes.
  5. Cool on a wire rack and serve warm. It stores well in the fridge for 3 days, or in the freezer for up to 1 month.
