Carrots add a marvelous touch to the regular cake and turn it into something pretty fancy. This is a really easy recipe that can be made quickly whenever the need arises.
Ingredients:
- 300ml vegetable oil
- 300g granulated white sugar
- 4 eggs
- 4 carrots
- 2 1/4 cups self-raising flour
- Almonds, dates, dessicated coconut or dried raisins as desired
Preparation:
- Clean and grate the carrots. We need about 2 cups (slightly pressed) of grated carrots.

- Prepare any other ingredients you are using: chop some roasted almonds, pit and cut some dates or measure out some dessicated coconut/dried raisins. Im only using half a cup of cubed dates.

- In a bowl, whisk together the oil and sugar and add in the eggs, one at a time, mixing after each addition.
- Add the carrots and fold them in.
- Sift over that the self-raising powder and fold that also in. Once this is done, the cake batter is ready!
- Pour in a lined baking tin and bake in a preheated oven at 180°C for about 25 minutes, until golden brown. A toothpick inserted in the centre should come out clean.
- Cool on a wire rack and serve with some creamcheese glaze.
