Quick Easy Barfi

Craving some barfee in the middle of the night? Or just not wanting to go buy some? This recipe makes 2 barfee servings and take just a few minutes to make..

Ingredients:

  • 1 cup powdered full-cream milk
  • 1/3 cup (80ml) sugar syrup- medium consistency
  • 2 tbsp butter/ margarine
  • optional: 1 tsp flavouring and/or 1 drop food colouring
  • coloured vermicelli/ almonds as topping

Preparation:

  1. In a pan over medium flame, add the butter and let it melt.
  2. Add the powdered milk and stir for 3-5 minutes, until lightly roasted. Do not allow it to turn brown/ burn.
  3. Once roasted, add the sugar syrup (containing the optional colouring/ flavourings) and mix with a wooden spoon/ spatula. Keep stirring until the paste no more sticks to the surface of the pan.
  4. Turn off the flame and transfer to a small greased pan, about 3″x5″. Alternatively, this can be spooned into mini cupcake tins or flower barfi moulds as desired. Sprinkle coloured vermicelli/ almonds on top (optional)
  5. Allow to set for 15mins, then cut into squares and serve!

This recipe can be doubled or tripled as required, respecting proportions.
