Square lime cookies are fancy and loved by all age groups for their strong and enveloping lime flavour.
Ingredients:
-125g butter (at room temperature)
-1 cup granulated sugar
-1 egg
-zest and juice of 1 lime (Alternatively, a lemon or orange could be used but the lime brings out better flavour)
-50g dessicated coconut(optional)
-1/2 tsp baking powder
-1/4 tsp baking soda
-1tsp vanilla essence
-2 cups all purpose flour
Preparation:
1.Cream the butter and sugar until well mixed and sugar granules are no more easily visible.
2.Add in the egg and whisk.
3.Add the vanilla essence, coconut, zest and lime juice and mix well.
4.Add the flour, baking powder, baking soda and salt and form a dough roughly with the hands.
5. Wrap in cling film and form into a long rectangle with a square cross-section of about 2.5 inches.
6.Refrigerate for a few hours until firm to the touch. (Or pop in the freezer for abt 20 mins if you are in a hurry)
7.Cut the rectangle into squares at 1/4 inch thickness and lay the cookies on a lined baking tray, with sufficient space in between them.
8.Bake in a preheated oven at 180°C for about 12 minutes, until slightly darker in colour. (The cookies should still be soft to the touch. Let cool for them to harden up). Serve once cooled.
PRO TIP: This cookie dough can be prepared in advanced and stored in the fridge for up to 3 days, or in the freezer for up to 1 month.
