A sweet indian traditional laddoo perfect for any occasion or simply to calm a sweet craving.
Ingredients:
-2 cups gram flour (bessan)(approx 250g)
-1 3/4 + 2 cups water
-1/2 tsp yellow food colouring
-1 1/2 cups granulated white sugar
-Few cardamon/nutmeg powder
-Oil for frying
-dried raisins (optional)
Preparation:
- Prepare the batter by mixing gram flour, 1 3/4 cups water and food colouring to obtain a watery batter. Leave it to rest for 20 minutes.
- Prepare the syrup: Mix sugar, 2 cups water and cardamon/nutmeg powder in a saucepan and bring to simmer. Let the syrup thicken then remove from heat.
- Fry the batter into boondis (i used a spoon with holes in it to form boondis for frying) at medium heat in hot oil for a few seconds and remove from oil.
- Once all the batter has been fried into boondis, pour 2/3 of the syrup little by little over the boondis and hand mash all of this together. Add more syrup of necessary.
- Form little balls and place a dried raisin on top of each. (optional)
- Place the laddoos aside for a few hours for the flavours to develop/ chill. Then serve.
