Apple Oat Cookies

The delicatest way to eat apples while getting a lot of fibers, with just a glimpse of cinnamon and nutmeg.. uhmm delicious! Crumbly on the outside and soft on the inside, simply divine!

Ingredients:

  • 1 cup all purpose flour
  • 1 1/2 cups oats (any kind you like, i used regular quick white oats)
  • 2/3 cups light brown sugar
  • 125g soft butter
  • 1 egg
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 medium green apples (cut into small cubes)
  • 1/2 tsp baking powder
  • 1/4 tsp of nutmeg and cinnamon powder mix (or more as desired)

Preparation:

  1. In a mixing bowl, mix together butter and sugar with a metal spoon.
  2. Add in the egg and mix energetically until combined.
  3. Add the honey, spices and vanilla and mix.
  4. Add in the oats, flour and baking powder and mix until you form a stiff but sticky dough.
  5. Roughly mix in the apple cubes and spoon the dough irregularly, about 1 tbsp for each cookie, on a baking tray lined with a baking sheet. Makes about 24 regular sized cookies
  6. Bake in a preheated oven at 180°C for about 10 mins until golden brown on the top
  7. Serves best hot!
