The delicatest way to eat apples while getting a lot of fibers, with just a glimpse of cinnamon and nutmeg.. uhmm delicious! Crumbly on the outside and soft on the inside, simply divine!
Ingredients:
- 1 cup all purpose flour
- 1 1/2 cups oats (any kind you like, i used regular quick white oats)
- 2/3 cups light brown sugar
- 125g soft butter
- 1 egg
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 medium green apples (cut into small cubes)
- 1/2 tsp baking powder
- 1/4 tsp of nutmeg and cinnamon powder mix (or more as desired)
Preparation:
- In a mixing bowl, mix together butter and sugar with a metal spoon.
- Add in the egg and mix energetically until combined.
- Add the honey, spices and vanilla and mix.
- Add in the oats, flour and baking powder and mix until you form a stiff but sticky dough.
- Roughly mix in the apple cubes and spoon the dough irregularly, about 1 tbsp for each cookie, on a baking tray lined with a baking sheet. Makes about 24 regular sized cookies
- Bake in a preheated oven at 180°C for about 10 mins until golden brown on the top
- Serves best hot!
