Gorgeous cinnamon date rolls are now just a recipe away from you. They are super soft with the overwhelming flavour of cinnamon inside; perfect to be eaten steaming hot with a cup of tea on rainy days, or warm with fruit juice on sunny days…
Ingredients:
-4 1/2 cups all-purpose flour (approx. 565g)
-1/2 cup granulated white sugar
-1 sachet dry yeast (11g)
-100g melted butter
-2 eggs
-1 cup liquid milk + 1/2 cup yoghurt
-1/2 tsp salt
-a dozen dates
-1 tsp cinnamon powder
-3/4 cups boiling water
-melted butter to glaze
Preparation:
- In a bowl, mix the flour, yeast, sugar and salt.
- Make a well in the centre and add the melted butter, eggs, milk and yogurt.
- Mix with your hands/ wooden spoon to form a dough. Knead for about 10 minutes and cover with plastic film. place in a warm spot and allow to proof for about an hour until it doubles in size minimum. (I like to put the dough in a warm oven for that; 40℃ for 10 minutes then switch it off)
- In the meantime, prepare the cinnamon date paste:
- Pit the dates, place in a heatproof bowl and pour the boiling water over it.
- Cover and let rest for about 10 minutes.
- Blend this through a food processor but leave a few chunks through.
- Transfer to a saucepan and let it thicken into a nice paste over medium heat, stirring constantly. This should take about 7 minutes.
- Remove from heat and add 1 tsp cinnamon powder (you may add more if you wish). Depending on the sweetness of the dates you are using, you might taste it to see if additional sugar is required; 1/4- 1/2 cups of brown sugar can be added if needed. The paste is now ready to be used.

- The dough is ready when it has at least doubled in size and bubbles that have been formed are easily visible throughout.

- Cut the dough into 2 and roll each into rectangles with a rolling pin. Spread half of the cinnamon date paste on each. Cut into strips.

- Roll and place in a lined/ greased mould. This dough recipe fits into 2 square 7″ moulds, or relative substitutes.
- Cover and allow to rest for 30 minutes. By this time they will puff up.

- Finally, bake in a preheated oven at 120℃ for about 20 minutes, until they are golden brown. Brush with melted butter to prevent the crust from hardening.
