Lemon Coconut Cake

This the cake that i usually make when i need something quick and easy. It mixes the flavours of coconut and lemon and serves well with a light lemon sugar glaze.

Ingredients:

-3 eggs

-1/4 cup vegetable oil (approx 60ml)

-100g melted butter

-1 1/4 cups granulated white sugar (250g)

-juice and zest of 1 lemon

-3/4 cup dessicated coconut

-1/2 cup of liquid milk

-2 cups all-purpose flour (250g)

-1/2 tsp baking powder

-1/4 tsp salt

-1 tsp vanilla essence

Preparation:

1. Add the dessicated coconut to the milk and let it soak while carrying out the other steps. (At least 15 minutes)

2. In a large bowl, whisk the eggs, oil and melted butter together. (With a hand/stand mixer or even by hand)

3. Add the sugar and whisk well.

4. Add the lemon juice, vanilla extract and the coconut-milk mixture and mix until combined.

5. Sift together the flour and baking powder and add this to the previous batter. Fold in with a spatula or whisk.

6. Pour in a lined baking pan (i used an 8-inch square pan) and bake in a preheated oven at 180°C for about 20 minutes until a toothpick inserted in the centre comes out clean. Serve warm or cooled with a cup of tea.
