Mini Scones

Originally a British tea-time snack, scones are now consumed globally and are pretty easy to make. This recipe makes mini scones, which is even more fun as they are shaped into mouth bites, making them versatile!

Ingredients:

  • 500g all-purpose flour
  • 120g soft butter
  • 3/4 cup granulated white sugar
  • 3/4 cup liquid whole milk
  • 2 eggs
  • 1/2 cup dried raisins
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla essence
  • A pinch of salt
  • 1/4 cup of milk (optional)

Preparation:

  1. Rub the butter into the flour roughly, leaving a few small chunks here and there.
  2. Add the salt, baking powder, baking soda and sugar and mix.
  3. In a separate bowl, crack the eggs and add the milk and vanilla essence. Mix well with a fork
  4. Pour the mixture in no.3 slowly over the mixture into no.2 and form a rough dough. Do not work it too much.
  5. Add the raisins and roll out the dough.(I left out the raisins as I don’t like them but scones without raisins are almost not scones xD)
  6. Using a cookie cutter, cut out mini scones. You can also make this dough into the standard size ones. Minis are just more fun.
  7. Place the cut out mini scones on a lined baking tray and bake in a preheated oven at 180°C for 10-15 minutes, until golden.
  8. As soon as they come out of the oven, i like to brush them with the 1/4 cup of milk. This prevents them from dehydrating and hardening too much.(optional)
  9. Serve warm with a cup of freshly brewed tea, or with a scoop ice cream for some crazy experience!
