Almond Cookies

This is a nice, easy and quick recipe of almond cookies that can be made by hand or with a hand mixer. The roasted almonds give the cookies a gorgeous crunchy texture while still being soft on the inside.

Ingredients:

-2 1/2 cups all-purpose flour

-1 1/4 cups granulated sugar

-125g butter (at room temparature)

-1 egg

-1 tbsp almond essence

-1 tsp baking powder

-1/2 tsp salt

-50-75g roasted almonds, coarsely chopped

-few drops green food colouring

Preparation:

1.In a bowl, whisk the butter and sugar together until well mixed (use of a hand mixer is optional).

2.Add in the egg and whisk until incorporated.

3.Add the almond essence and food colouring and give it a whisk

4.Add the flour, salt and baking powder. Switch to a wooden spoon/spatula and mix well to form a dough. (This dough is not very sticky and can usually be handled.)

5.Add the chopped almonds and mix roughly to ditribute them.

6.Spoon out one tablespoon of the dough each on a lined baking tray, leaving enough space in between them as they do spread out while baking. (Do not smooth out the tops or form balls of them; they should have pretty irregular surfaces)

7.Bake in a preheated oven at 180°C for 12-15 minutes, let cool slightly on a wire rack and serve warm with a cup of milk 🙂

PRO TIP: This cookie dough can also be prepared in advanced and stored in the fridge for up to 3 days, or in the freezer for up to 1 month.
