Red Velvet Cookies

The sweetest, decadent little treat to share or to enjoy on your own… it can be made using a whisk or stand mixer… makes about 50 cookies ❤️

Ingredients:

  • 1 1/2 cups castor sugar
  • 3 1/2 – 4 cups all purpose flour
  • 1 egg+1egg yolk
  • 1/4 cup unsweetened cocoa powder
  • Gel food colouring
  • 1tbsp vanilla extract
  • 200g salted butter
  • 2-3 tbsp apple cider vinegar
  • 1/4 tsp baking soda
  • Icing sugar to decorate (optional)

Procedure:

  1. Cream together the soft butter and castor sugar until slightly fluffy
  2. Add in the egg+egg yolk and whisk
  3. In a separate bowl, mix together the cocoa powder, apple cider vinegar, red food colouring and vanilla extract
  4. Add mixture in (3) to batter in (2) and whisk until well combined.
  5. add in whisked flour and baking soda and mix with a spatula or whisk until a dough is obtained.
  6. Refrigerate dough for a minimum of 20 mins
  7. Roll our small balls around 1 inch in diameter, flatten slightly in a bowl of icing sugar. Make sure the icing sugar is coating all sides of the cookie.
  8. Repeat with all of the dough. Place on a lined baking tray with enough space in between each ball ( they do puff up when baking).
  9. Bake in a preheated oven at 180 for about 12 minutes (until cookies look done, do not over bake, they will turn dry).
  10. Cookies are ready to serve!
